A properly laced and tensioned wheel should not make noises. I have been building bicycle wheels for over 35 years. Many of my wheels have been used on tandems and by racing cyclists. I just read Sheldon Brown's article linked in your post. It is an excellent introduction to wheelbuilding. If you do everything exactly as he suggests, you will probably end up with a good wheel.

    Default Wheel

Wow, that is a lot of experience. I just got a hub off of e bay and rebuilt it. It is the coolest thing ever. I can not wait to build another wheel.
